Sardus Pater

The Sardus Pater winery is situated on the Island of Sant’Antioco, in the south – west of Sardinia. The winery was founded in 1949 as a Ltd. cooperative society. The winery started its business in 1955. Over the years, the production of wine has improved and is aimed especially at the enhancement of the Carignano wine. The grapes, from the 280 members, come from a vineyard of 200 hectares. The majority of the vines are Carignano and the oldest ones are situated on the Island of Sant’Antioco; the vineyards are at least 80 years old, they are planted on sandy soils. There is a low productiveness per hectare, but the production is of high quality grapes. From these vineyards the winery produces it most valuable red wines. From the harvest of 1994, the winery started the production of Vermentino.

The grapes are manually harvested between  mid-August and the  beginning of September from a single vineyard and they are put into cases and taken into the cellar. 
Before the crushing takes place, a heat removal process is carried out with the use of dry ice in order to maintain the aromas. 
In order to start the fermentation process that takes place at a temperature of 16°C, the must is put into small steel tanks at a controlled temperature.
