The harvest is done by hand, and then directly pressed. The fermentation is carried out with yeasts in temperature-controlled stainless steel vats. The wine is bottled 6-8 months after harvest.

The Clos Nicrosi is one of the oldest domains of Cap Corse created in 1850 by Dominique Nicrosi. At his death in 1920, none of his children took over the family business and it was not until 1959 that his great grand sons replant the vineyard. Today, Clos Nicrosi is led by Jean-Noel LUIGI and his children Marine and Sebastien. Le Clos Nicrosi is located in the plain of Macinaggio at the tip of Cap Corse. The area is mostly planted in traditional Corsican grape varieties Vermentino, Sciaccarellu Niellucciu and Aleatico, but also Muscat small grains. Its soil is rich in minerals, consists of degraded shales and alluvial statements, which bring freshness and minerality to the wine.
