The wine is produced from a Vineyard of 1,50 hectares, situated 100 metres above sea level, the soil is a clay and limestone mix, with a mild mediterranean climate. The vine density is 4500 plants per hectare with a productiveness of about 80 quintals.
The pruning follows the spurred cordon method and simple guyot process, the harvest is exclusively manual.
The average age of the apparatus is 15 years old.

Grattamacco was founded in 1977, it is situated on the top of the hill overlooking the sea between Castagneto Carducci and Bolgheri at 100m above sea level, in an area particularly suitable for growing vines, which enjoys a mild climate with significant temperature fluctuations at the end of summer. Grattamacco is part of the DOC Bolgheri, and since it was founded it has aroused the interest of the market for this new birthplace of the Cabernet Sauvignon in Italy. The first production dates back to 1978, a result of a Cabernet Sauvignon and Sangiovese, Merlot. The steep, hilly vineyards with an average slope gradient of 8% are partly cultivated following the spurred cordon system and partly the Guyot system, with a productiveness of 60 – 70 quintals per hectares.The average age of the vines is about 20 years old. During the harvest the grapes are carefully selected and, taking advantage of natural gradients, put into conical wooden vats made of oak, of 8 hectoliters, where the fermentation takes place with manual punching down and using of natural yeasts and long macerations. The fermentation is done completely with natural bacteria and it ends in barriques, which keep the varieties separate. After 12 months the blend takes places, then back to the barriques for a further maturing. The ageing in French oak barriques lasts for a period of 12-18 months, while the bottle ageing always lasts longer than 6 months. The company follows organic growing criteria, guaranteed and certified by AIAB.
