Criomaceration of the grapes. Separation of the skins from the must. The alcoholic fermentation takes place in stainless steel tanks at controlled temperature. Then the wine ages for 6 months in the same tanks, and it matures for other 3 months in bottle.

Gualdo del Re is in Suvereto, a small medieval town of Val di Cornia, in the province of Livorno. It is located just over 15 km from the sea opposite the Island of Elba closed behind by an amphitheater of hills. The name comes from the German “Wald” - forest - and was a particularly nice place for the exclusive use of his lord. The company covers about 40 hectares of which 25 are vineyards and 900 olive trees. The total wine production is about 100,000 of which about 13,000 bottles of organic Vermentino. Inside the property there is also a farmhouse with 9 apartments and a restaurant specializing in traditional local cuisine.
