The Vermentino is processed seperately. After a light destemming the must is left on the skins for 48 hours. After that a soft pressing takes places in order to separate the solid waste from the flower must, which is left to fermentate at a controlled temperature

The farm of Andrea Spagnoli is located on Monte Masignano in the district of Arcola on the border with Vezzano Ligure. It is located 130 m above the sea level and extends to the northwest of wide terraces for 3.5 hectares, that 2 of which has specialized vineyards, and the remainder for the olive groves, vegetable garden, plant grassland. The company was founded in the 50s; from the 80s it began producing the wine Colli di Luni (in purity) and Rossi IGT Italian Riviera di Levante
