The Vermentino and Malvasia harvest takes places in the last days of Septmeber. The grapes, harvested exclusively manually in 18 kg cases, they are placed in a cellar and left to fermentate for about 10 days at a low temperature. The temperature is kept cold and constant untill the wine bottling process, which takes place in the month of February.

Vincenzo Di Vaira was born into a peasant family that emigrated from Molise (Montenero di Bisacciain) in the territory of Bolghieri during the early 1950s. After years of experience working in the family business, Vincenzo began his own agricultural business on via Bolgherese, which nowadays has more than 50 hectares of land. The company is a family business and includes his wife Emanuela Granchi and the two daughters Sara and Romina Di Vaira. The company is located at the foot of the Rocca di Castiglioncello di Bolgheri, it is situated at the centre of a land of noteworthy vine traditions, such as the wine road “Costa degli Etruschi”, a territory situated on a strip of land parallel to the sea. Here there is everything that a visitor could wish for: The Medieval villages, woody hills, breath-taking views, beautiful dawns and sunsets, wine, oil and the food and culture of our people make this territory a magical area.
