Geographic position: 40-60 metres above sea level, along “Via Bolgherese”
The soil is medium texutred with stones.
Training system: Guyot prunning
Density: 6,000-8,000 plants per hectare
Yield: 8,000 kg of grapes per hectare with a productivness of 80%
Zizzolo comes from the name of the Vineyard:: “Vigna allo Zizzolo”
In the Tuscan dialect “zizzolo” means Jujube, a tree which grows naturally in the Mediterranean
Vinification method: monovarietal for every single grape
Fermentation in steel at a controlled temperature of 14-16°C
Length of fermentation: 20 days
Serving temperature: 10-12°C
It is a very versatile wine. Perfect as an aperitif, it matches well with fish or vegetable starters, and delicate main courses of fish or white meat. Try it with pizza.
Colour: straw yellow with greenish glints
Aroma: exotic fruits, lime and other citrus fruits
Flavour: peasantly fruity and floral. A good continuity in the mouth, glints of cytrus in the finale.
