Before being processed seperately in inox steel tanks at a controlled temperature the manually harvested grapes undergo a further selection in the winery (16-18° C). The development of the wine at the end of the alcoholic fermentation continues in cement tanks in contact with its own yeasts in order to give the final wine a better roundness and taste.

The Winery of Santadi is situated in the Sulcis area, in the south – west of Sardinia, just at a few kilometers from the wonderful beaches and white dunes of Porto Pino. The company was founded in 1960. The arrival of a new management team that was full of determination, enthusiasm and passion managed to overcome the first difficult years. The company took another direction and adopted different strategies, which gave the company a new face with more coherent guidelines for its partners. The goal is ambitious: it focuses on bottled wine, particullary typical red wines, to give visibility and identity to the principals of cultivation of the territory of Carignano. However, it doesn’t neglect the traditional Sardinian white grapes vines such as Vermentino, Nuragus and Nasco. As for the enological aspect the company aims high, with the assistance of the internationally renowned oenologist Giacomo Tachis, whose arrival changed the course of the Winery of Santadi. Wines with a Carignano base are made from the grapes of the bush trained vineyards (latin vine), with an exuberant extractive content, a noble tannic outline and a perfect balance between the organic-acid component, the alcoholic strength and the polyphenolic values. The judicious use of French Barrique closes in a wonderful and harmonious way the development cycle of these exciting wines. The great red wines Terre Brune, Rocca Rubia, Noras, Araja, Grotta Rossa and Antigua are juxtaposed with the refined white wines Villa di Chiesa, Cala Silente, Pedraia, Villa Solais, Latinia, made according to ancient wine making tradition combined with new techinques in the vinification, stabilization and bottling processes. The innovative spirit, the respect for the tradition of the territory are for our producers a constant, assiduous commitment, that not only does honour to the Winery itself, but also protects a true traditional heritage, culture, taste, style and history, which are the true essence of our rural way of life.
