Colli di Luni
The wine is produced with the grapes that are left to dry in the attic of the Farm until late autumn. After a light pressing and a brief fermentation the wine is left to age in oak half – barriques for at least two years.
Colli di Luni Doc Vermentino Costa della Ginestra
The manual harvest takes places in September. After the harvest comes the crushing of the grapes and the product is left on solid waste for 48 hours. Then comes the pressing, the cold clarification, and finally the temperature controlled fermentation at 15-16 °C for a period of time that ranges between 15 and 30 days.
Colli di Luni Vermentino D.O.C.
Vermentino Colli di Luni D.O.C. is produced by maintaining the old traditions.
It comes from a vine solar cultivated on the south hill of Fosdinovo.
The vintage is handmade, vinification in white controlled temperature and the floral aromas obtained, make Vermentino Ca 'Brasino a wine that is well suited as an aperitif or throughout a meal.
Serving temperature: 6-8 ° C
