Period and type of harvest: mid September with manual harvest in 20 kg cases.

Vinification technique: maceration on the skins for 48 hours, after the devatting, fermentation and vinification in steel tanks.
Fermentation temperature: 15-17°
Type and length of the ageing process: in steel tanks untill March/ April
Serving temperature 12°
Colour: straw yellow with golden highlights
Aroma: elegant and intense with evident scents of spring flowers
Flavour: harmonic of acacia blossom honey and golden apple
The structure of the wine makes is particularly suitable for the most complex dishes of the Ligurian cuisine, such as stockfish, trippa in umido, poultry, soups and fish
