HARVEST: between the second and third decade of September. VINIFICATION: after a 12-hour, low-temperature maceration, the grapes are gently pressed, and the must ferments at 18-20°C. The wine then rests on the lees for 6-8 months, then ages in the bottle for a further 2 months.
Bouquet intense and complex. Ripe fruit, stewed apples, jasmine, with light notes of vanilla and caramel. Palate is full bodied and well balanced. The initial richness is enriched by a silky texture, in perfect harmony with the acidity and minerality. Long and clean on the finish.
Full-flavoured pasta dishes, loabster, tuna, grilled fat-rich fish, light meats, medium-aged cheeses.
