Traditional, handmade to save grapes integrity. After destemming, cryomaceration of grapes for 12/24 hours, soft pressing and flower mosr clarification. Low-temperature fermentation in stainless steel tanks (13/15°C) for 10/15 days, then refining with lees for 7/8 months, and further refining in bottle for 2 months.
Colour straw yellow with green glints. Delicate smell of orange blossom and maquis (mediterranean shrubland). Fruits notes of pineapple and grapefruit. Delicate, well-structured, slightly soft with intense mineral sensation, sapid and fresh. Balanced and elegant. A pleasant bitterness complete its profile.
Good with sea starters, fish and crustacean dishes and with meat. It is a great aperitif if served cold (8-10°C).
