Frittelle alle erbe
Pancakes with herbs, which in some places of the island are served as an appetizer, hot or cold.
For dough: mix the butter with a beaten egg, add flour and salt. Stir until smooth. Leave for 30-45 min at a room temperature.
For stuffing: boil the beets in boiling salted water for 5 minutes, drain and rinse with cold water. Dice into very small cubes. Fry the diced onion in olive oil, add the beets, parsley, mint and oregano. Add salt and pepper.
To cook the pancakes: cut a piece of dough and roll it into a round shape on a work surface sprinkled with flour. Put a tablespoon of the filling on one half of dough, then fold and seal the edges. Remove any excess flour and fry in hot oil.
Dough: 125 g of flour, 250 grams of butter, a pinch of salt. Stuffing: 3 onions, 2 beets, 1 bunch of parsley, mint and oregano.
