Made from a blend of grapes 100 % of the traditional Vermentino. Our white wines, those made in the Domanie as well as those made in Sartène (Comte Peraldi AOC Corse) perfectly express the complexity and the fineness of Corsica’s blend of grapes.
Soil: soils of granitic sand. Poor, acid soils.
Vinification: harvest in cases. The grapes are put on a conveyor belt, they are selected on the table, directley crushed with a pneumatic press, 20% after a maceration on the skins. Cold Débourbage, fermentation in inox tanks at a controlled temperature (18-20°). Ageing in inox tanks. The labeling process takes place before the bottling.
Tasting: colour straw yellow, aroma mineral and fruity, flavour: fresh first impact, very rich, aromas delicate and melted. A good aromatic expression of Vermentino.
Serve: at 12° C. the wine improves if opened two hours before serving. Serve with fish and seafood.
Storing: to be used within 4 years. .
Presentation: traditional bourgogne bottle, CRD, Box of 12 bottles.
