Vine density: about 4.000 plants per hectare.
Soil and subsoil: red clay.
Vinification: stripping, and crushing with light sulphite treatment, natural fermentation start, mecration of about 15 days with delicate pumpovers, ageing in steel and bottling with slight filtering. Sulphites: in average: SO2 frees 15 milligrams/litre; SO2 total <50 milligrams/litre

The current family- run business begins at the end of the eighties with the land entrusted to Andrea Kihlgren from the mother and which belonged to his family for a long time, the Picedi Benettini. It was a commitment, and let's say a bet, in a difficult moment for the agriculture, but that was giving some encouraging sign just for reborn in the viticulture. It needed to reorganize the farm which until then had been divided into small farms, as traditionally had been farming in Lunigiana, choosing more carefully the different recline vocations for the vineyard and the olive trees. With the progressive replanting is obtained a decisive the predominance of Vermentino grape, but also the recycling of the old grape varieties like Albarola and Merla (Canaiolo acclimatized in our area for a long time). The result of this work is the current level of about 7.5 hectares of vineyards and 3,5 of olive tree groves. The practices of conduction of the lands are intended to preserve the fertility of the lands by planting the varieties for renewals of herbaceous and green manure, the periodic supply of manure and the substance vegetable composed. The treatments to contain fungal diseases of plants where it is necessary are based on copper and sulfur. The work in the wine cellar is oriented to the maximum respect for the grapes and the wine (no one enological product has been used, except modest doses of sulfur dioxide), consistently with that has been done in the vineyard, in the certainty that the integrity of the wine is an indispensable condition of the authentic quality.

Vigneto: Santa Caterina, Sarzana (SP). Superficie: 3,5 ettari. Età media delle piante: 15 anni Potatura e resa media per pianta: Potatura a guyot. Resa media per pianta: 1,6 kg. Densità d’impianto: circa 4.000 piante per ettaro. Suolo e sottosuolo: Argille rosse. Vinificazione: pressatura delle uve e leggera solfitazione. Decantazione naturale e avvio fermentativo spontaneo. Dopo la sfecciatura il vino rimane sulle sue fecce fini fino all’imbottigliamento. Leggera filtrazione prima dell’imbottigliamento.
