Azienda Agricola Cipriana Srl

The Cipriana Farm is a historical company in the area of Bolgheri (it is the fourth founded in the area, the first bottle of San Martino dates back to 1978); it is located at the foot of the medieval town Castagneto Carducci and it is owned by the Fabiani brothers, vine growers since 1975. The company has about 8 hectres on vineyards and 3 of olive grapes. The vineyards, partly located next to the business area of the town and partly on the via Bolgherese (where many well known vine companys are located) have an average age of 10 years, with a vine density ranging between 5000 and 6000 plants per hectare; the training system is spurred cordon and guyot. The olive grove, that includes many century old plants, is grown in typical Tuscan vessel system. The wines they produce are: two Red Bolgheri, one Bolgheri Superiore, one Vermentino Bolgheri and one Rosè Bolgheri, all DOC wines. The Bolgheri Superiore wine, that takes its name from the famous poem of G. Carducci "San Martino" is made from Cabernet Sauvignon and Petit Verdot vineyards, while the other Red wines are made with Cabernet Sauvignon and different percentages of Merlot and Syrah. The company’s cellar is entirely underground in order to guarantee an optimal temperature for the vinification and ageing processes; the vinification takes place in cement tanks at a controlled temperature, exclusively using grapes owned by the Cipriana company which is part of the Consorzio Bolgheri DOC and is helped in the management of the cellar and countryside by the expert Dott. Francesco Venerini.
