The harvest of the grapes takes place during the first 15 days of September. Fermentation at controlled temperature of 17°C.
Rest at lees contact for 30 days.
No malolactic fermentation takes place in order to maintain the freshness and acidity of the wine intact.
Recommended tasting temperature: 12°C

The Folonari family has worked in the wine making sector since the end of the 1700's. In 1912 Italo Folonari, the grand father of Ambrogio Folonari, together with his brother Francesco, bought the Ruffino company, well known at the time for the Chianti wine, characteristically packaged in flasks. In 2000 Ambrogio left the Ruffino company and the rest of the family, and together with his son started the “Ambrogio and Giovanni Folonari Estates”, keeping some of the best lands. In such a way, a group of companies was founded in one of the most suitable vine areas of Tuscany: Tenuta di Nozzole and Tenute del Cabreo (in Chianti Classico), Campo al Mare (Bolgheri), La Fuga (Montalcino), TorCalvano (Montepulciano), Vigne a Porrona (Maremma)
