Macerazione uva a freddo per 48 ore poi mosto fiore in fermentazione. Il 50% fermenta con le bucce per 10 gg. e poi vengono assemblati.
Matis
Made from Vermentino grapes certified ICEA and DEMETER grown in a biodynamic way. The grapes come from the company’s vineyards cultivated with the esplaier system, on acidic clay soils, with a low productivness per plants. The grapes are pressed, part of their musts are transfered in steel tanks, the other part in oak barriques, where the vinification with native yeasts takes place. Follows the ageing of the wine in contact with the fine lees at least for 5 months (50% steeel and 50% barrel) and 2 months in the bottle, then comes the settling and the bottling without any filtering process.
The wine is made without any additional sulphites, selected yeasts or any kind of wine adjuvant or additive. It is not filtered or clarified.
